2021 Domaine Grand-Chemin Les Origines - Les Trois Seigneurs - Pays D'Oc Sauvignon et Colombard 0.75 Ltr. Blanc
picture of

Beautiful golden yellow color. In the nose we find candied citrus fruit, white stone fruit and white blossom. Nice and round and ripe in the mouth. Semi-sweet style that is still fresh and lively to drink. The sweet and candy-like notes are refreshed in the aftertaste by a lively acidity typical of Sauvignon. This nice balance prevents the wine from becoming fatiguing and syrupy.

As a delicious digestive after dinner, with sweets during coffee, fruity desserts, pastries and of course the highly contested (but oh so delicious) foie d'oie.

climate

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

soil

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

vinification

The grapes (Sauvignon blanc and Colombard) are picked at optimum ripeness. After separation of sediments, the fermentation is started. When an alcohol content of about 10°C is reached, the alcoholic fermentation is stopped to remain more sugars. After 6 months resting in stainless steel, bottling follows.
