Shiny, dark ruby red color with purple hues. Intense nose with impressions of black and red fruit. Blackberries, black plums, blue and red berries. A perfectly supportive wood touch completes the whole. Nice concentration in the mouth that confirming the nose. More spicy notes of pepper and garrigue emerge, as well as notes of forest floor, violet and a hint of graphite. Petit Verdot gives extra structure to the balanced final with long end.

This fairly strong wine is ideal in combination with game dishes, red meat on the grill or a barbecue in general and confit de canard.

climate

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

soil

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

vinification

Manual harvest with strict selection. After careful pressing, the grapes are first fermented separately in stainless steel vats at 24-28°. Then follows the assembly and the wine is aged for 8 months in wooden barrels of 225 liters. After clarification and filtering, the wine is bottled. It then rests for a while in the cellars before release.
