climate

Grapes from 2 valleys: Bendigo has a warm and temperate climate with precipitation throughout the year. Winters are mild with more precipitation than summer. Hilltops has a continental climate with warm summers and fairly cold winters due to its higher altitude.

soil

Bendigo (Victoria): Vineyards at 200m altitude. Lime/clay with sandy top layer with stones. Hilltops (New South Wales): Vineyards at 400-600m altitude. Soil of gravel, basalt and sandy granite.

vinification

The grapes from the different vineyards (and 2 regions) are picked separately, selected and fermented in open barrels under controlled temperature. The wines are then further matured on a mixture of stainless steel and French oak. Then the final blend is made and bottled.
